A Salad Recipe to Impress Anyone
Lord knows I love hosting and cooking a special thing or two for others. When deciding what to make however, I am learning to balance effort with payoff. This refreshing salad from my home-chef superhero, Nigella Lawson will drive both you and your guests wild.
Time to prepare: 30 minutes
Here are the ingredients:
1 small red onion
2-4 Limes, depending on juciness
1 large, seedless watermelon
250g feta chese
1 bunch of fresh, flat-leaf parsely
1 bunch of fresh mint
3-4 tablespoons of extra virgin olive oil
1 can pitted, ripe olives
black pepper
sea salt
Recipe:
Peel and halve the red onion and cut in to half-moons. Put into a small bowl and steep with lime juice for no more than 30 minutes. This will remove the pungency of the onion and give such a refreshing tang to the sweet watermelon you’ll be adding these onions to new recipes in no time. Once the onion slices are a faint pink remove from lime juice. Remove the rind and chunk the watermelon. Top with freshly grated black pepper, sea salt, olive oil, feta, olives, Onion, parsley and mint.
