Jane’s Pistachio Frozen Custard

With warm weather finally upon us, this Northern Girl is ready for a treat. One of my all-time favorite deserts to make and keep around me is frozen custard. With a simple to operate Kitchen-Aid attachment, you too can be cool all summer long 😎

Prep time: 5 hours

Churn time: 30 minutes

Ingredients (Makes one pint):

  • at least 16 oz pistachios (shelled and rinsed)

  • 6 egg yolks (separated)

  • 4 cups heavy whipping gream

  • 1 cup granulated sugar

  • 1-2 tbs vanilla extract

  • 1 tbs salt

Recipe:

First you’ll need to prepare and chill your custard. Separate the egg yolks and whisk them until combined. Add sugar, vanilla extract, salt, and egg to a saucepan and heat slowly on low heat- stirring frequently to make sure the custard does not curdle (also commonly referred to as breaking). Reduce to a smooth, thickened batter-like consistency. Chill 4 hours to overnight.

Prepare your Pistachios by roasting at 350 degrees for 10 minutes before boiling them for another 45 in 3 cups of water. Next extract pistachio flavor by juicing. The juicer will naturally separate the darker, gritty components from the desired bright green pulp and liquid. Pour juiced liquid and bright green pulp scraped from the juicing chamber into a bowl and combine until smooth (Discarding the darker pulp removed during the juicing process).

Next, pour custard, pistachio base, and heavy whipping cream into thoroughly chilled Kitchen-Aid bowl attachment and allow to simultaneously mix and chill until you start to hear a clicking sound. This means the custard has adequately hardened. Scrape from bowl into your favorite container for storing custard and chill until ready to eat.
